Another delicious summer salad that doesnt really need a recipe. You can experiment with ingredients and use what you have, add some dressing and viola! A hearty salad that can be eaten as a main course, or a filling sidedish. Enjoy!
Ingredients
Radishes, quartered and sliced
2-4 green onions, sliced or red onion, chopped
1/2 Red or green bell pepper, chopped
1 small tomato, chopped
1/2 cucumber, chopped
1/2 avocado, chopped
Cilantro, chopped
1/4 cup or so cooked quinoa
1 can garbanzo beans
Dressing
1-2 Tbsp extra virgin olive oil
juice of one lemon
tiny drizzle of honey or maple syrup (1/2 teaspoon)
Directions
Add to veggies and mix
